Rice: "Fried" Rice

note: per plan, not supposed to use peas.. can omit if desired
List of Ingredients
* 3 cups cooked brown rice
* 1/2 cup sliced fresh mushrooms
* 1/2 cup shredded carrots
* 1/4 cup sliced green onions
* 1/4 tsp ginger
* 1 garlic clove, minced
* 2 tbsp reduced sodium soy sauce
* 3 egg whites, beaten
* 1/8 tsp pepper
* 3/4 cup frozen peas, thawed**
Recipe
While rice is cooking, heat a wok or skillet over medium-high heat until hot. Add mushrooms, carrot, onions, ginger, garlic, and a splash of water; cook and stir 1 minute. Reduce heat to low. Stir in cooked rice and soy sauce. Cook 5 minutes, stirring occasionally. Push rice to side of pan, pour eggs and pepper on other side. Cook over low heat, stirring constantly until eggs are done. Add peas to mixture and stir contents of wok together; cook until thoroughly heated.
