Salad: Mediterranean Chicken Salad

1 box (5-1/4 oz.) quick-cooking bulgur wheat
3/4 lb. chicken tenders
1 T. olive oil
1 c. chopped tomato
1 c. chopped fresh parsley
2 green onions, sliced
2 T. lemon juice
Black pepper to taste
Recipe
Prepare bulgur according to package directions. Meanwhile, cut chicken tenders into 1-in. pieces. Heat olive oil in medium skillet. Add chicken; cook and stir until no longer pink in center. Remove from heat; cool slightly. Combine bulgur, chicken and next 4 ingredients; toss gently to coat. Season with pepper.
