    Salad: Kiwi-Rice Salad

    List of Ingredients

    2 kiwifruit, peeled, halved vertically and slied into 1/2 round pieces
    1 medium aple, cored and cut in 3/4" cubes
    3 cups cooked white rice
    1 stalk celery, sliced
    1 med red bell pepper, cored, cut in thin strips
    3 scallions, thinly sliced
    2 tablespoons chopped fresh parsley
    1/4 cup rice wine vinegar

    Recipe

    Combine the fruit, rice, celery, bell pepper, scallion and parsley in a large bowl. Pour the vinegar over the salad and toss well. Cover and refrigerate for 2 hours before serving.
