    Salad: Bean-Artichoke Salad

    List of Ingredients

    3 cups green beans, cut into 2 inch pieces
    1/3 cup balsamic vinegar
    1/4 cup chopped fresh parsley
    1 tablespoon dried basil
    3 cloves garlic, minced
    1/4 teaspoon ground black pepper
    1 large carrot, sliced
    1/2 cup thinly sliced onion
    3 cups cooked pinto beans
    3 cups water packed canned artichoke hearts rinsed, chopped
    1 medium tomato, cut into thin wedges

    Recipe

    Place green beans in a steamer basket over boiling water, cover and steam until tender-crisp, about 2 minutes. Plunge into cold water and then drain thoroughly. Mix vinegar, parsley, basil, garlic and black pepper. Combine veggies and beans in a large bowl. Pour dressing over the salad. Toss gently and top with tomato slices. Serve.
