    Salad: Hot Pepper Mango Slaw

    List of Ingredients

    1 red bell pepper, small sized, seed and chopped
    1 jalapeno pepper, split in half
    1 poblano chili pepper, small sized, seed and chopped
    3 scallions, trimmed and cut into pieces
    1 mango, peeled, diced
    1 tbsp. Splenda, to taste
    2 tbsp. cider vinegar
    1 lime, juiced
    1/4 tsp. freshly cracked black pepper
    1/4 cup cilantro, leaves only

    Recipe

    1. Slice the red pepper, jalapeno, poblano pepper, and scallions using a food processor fitted with a fine slicing blade.

    2. Combine sliced pepper mixture with the mango, splenda, vinegar, lime juice and pepper. Toss mixture well and chill for 15 minutes.

    3. Fold in cilantro leaves just before serving pepper slaw.

    (To be eaten only for snacks due to fruit – great over chicken breasts)
