    Salad: Jicama Salad

    List of Ingredients

    * 1/2 medium jicama, cut in small julienne (a v-slicer works great for this)
    * 1/4 bell pepper (any color, red is especially nice)
    * 1/2 cup fresh pineapple, cut in small pieces
    * 1/2 tsp dried cilantro or 1 tbsp fresh
    * 2 tbsp rice wine vinegar*
    * 1 - 2 tbsp pineapple juice (depending on how juicy the pineapple is)

    Recipe

    Mix rice wine vinegar, pineapple juice and cilantro together in a small bowl or cup. Toss jicama, pepper and pineapple pieces together in medium mixing bowl. Pour dressing over and toss. Refrigerate at least a few hours to mix flavors.

    *Be sure to read the label of the rice wine vinegar. Some brands contain very high amounts of sodium and sugar.
