    Salad: Sweet Carrot Salad

    List of Ingredients

    5 cups carrot sliced
    2 cloves garlic
    2/3 cup fresh lemon juice
    1/4 cup fresh parsley chopped
    2 tablespoons sugar or Splenda to taste
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground cumin
    1/2 teaspoon paprika

    Recipe

    Combine lemon juice, sugar or splenda, cinnamon, cumin, and paprika in a medium bowl.
    Add remaining ingredients to bowl and mix well. Serve salad at room temperature or chilled.

    Notes: The original instructions for this recipe were to cook the carrots and garlic in water for 8 minutes, and then drain and discard the garlic.
