2 tablespoons chopped fresh parsley
6 tablespoons sherry vinegar
2 cloves garlic, minced
3/4 pound peeled, devined and cooked med. shrimp
2 cups diced tomato
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
Recipe
Combine first 3 ingredients in a medium bowl. Whisk until blended. Ad shrimp and remaining ingredients. Toss well. Cover and chill. Makes 6 portions of 2 oz. Protein B.
