    Salad: Sweet N' Sour Tuna Rice Salad

    adapted from Wonderful World of Walnuts & Rice

    List of Ingredients

    3 tablespoons red wine vinegar
    2 teaspoons granulated sugar (or use Splenda instead)
    (original recipe calls for 1/4 teaspoon salt )
    1/4 teaspoon pepper
    8 ounces low sodium tuna in water drained, reserve liquid, chunked
    2 cups long-grain rice cooked (white or brown)
    2 cups tomatoes peeled and chopped (fresh)
    1 cup red onion chopped
    1 cup celery finely diced
    1/2 cup scallion chopped
    (original recipe calls for 1/2 cup frozen peas thawed)

    Recipe

    In a small bowl, combine vinegar, sugar or splenda, (salt, )pepper and 1 tablespoon of reserved tuna liquid. In a large bowl combine remaining ingredients; add vinegar mixture and toss. Let stand for 10 minutes; toss again and serve.
