Baked Fish Creole Style

List of Ingredients
4 cod or halibut steaks
2 tsp lemon juice
pepper to taste
1 onion, minced
1 green pepper, seeded and chopped
6 tomatoes, peeled and chopped
1/2 tsp dried oregano

Rinse fish steaks in cold water and pat dry. Place in one layer in a shallow, ovenproof baking dish. Sprinkle with lemon juice and season to taste with pepper. In a 10 inch skillet, saute onions and green pepper until soft, adding a little water, if necessary. Stir in tomatoes, oregano, and garlic powder. Bring to a boil, reduce heat, cover, and simmer 10-15 minutes.
Spoon mixture over fish, cover, and bake at 350 degrees for 30 minutes. Garnish with parsley if desired.
