    Basil and Tomato Shrimp

    This can be made using shrimps or scallops

    List of Ingredients




    1 pound shrimp peeled and deveined (or 1 pound of scallops, rinsed)
    2 cloves garlic chopped (2 to 3)
    2 tablespoons fresh basil or 1 TBS dried
    1 1/2 cups fresh tomatoes chopped (roma or plum are best)
    olive oil (or use cooking spray or broth for the saute step)

    Saute the shrimp (or scallops) with garlic in 1 tsp of olive oil (or use cooking spray or broth for this step) until they loose their transparency (about 4-5 minutes max). Add tomatos and basil, and simmer 5 more minutes. Serve over rice or pasta, with a sprinkle of good fresh or shredded parmesan (the powdered stuff doesn't seem to do it).
