Braised Rice w/ Mushrooms & Shrimp

1 large onion, chopped
6 ounces portobello mushrooms, sliced
4 shiitake mushroom caps, sliced
1 1/4 to 1 1/2 cup low salt chicken stock or water
7 ounces shelled shrimp, halved lengthwise
2 scallions, chopped
2 tablespoons chopped fresh cilantro Recipe
Coat a large nonstock skillet with no-stick spray. Add the onions and cook over medium high heat, stirring for 3 minutes. Add the portobello mushrooms and shiitake mushrooms. Coo, stirring for 3 minutes. Add the rice, mixing well. Add 1/2 cup of the stock or water. Cook, stirring for 4 minutes, or until the liquid is absorbed. Add an additional 1/2 cup stock or water. Cook, stirring occasionally, for 4 minutes, or until the liquid is absorbed.
Add the shrimp and 1/4 cup of the remaining stock or water. Cook, stirring occasionally, for 4 minutes, or until the rice is tender and the liquid is absorbed. If the rice isn't cooked, add the remaining 1/4 cup of stock or water and continue cooking until tender. Stir in the scallions and cilantro.
