List of Ingredients
1 medium onion chopped
1 green pepper chopped
1 clove garlic minced
1 teaspoon butter (or use cooking spray or broth or red wine)
2 tomatoes seeded and chopped
1/2 cup dry red wine
1/4 teaspoon dried thyme
1/2 teaspoon cayenne pepper
4 5 oz. cod fillets
2 tablespoons lemon juice Recipe
Saute the onion, green pepper and garlic in butter until tender (or use cooking spray). Add the tomatoes, wine, thyme and cayenne. Bring to a boil. Add the cod, reduce the heat, cover, and simmer for about 10 minutes ot until the fish flakes. Add the lemon juice before serving.
