Cajun Shrimp & Rice

List of Ingredients
2 ½ c rice
2 lbs peeled and deveined large shrimp
1 T Salt free Cajun seasoning
2 cloves minced garlic
1 green pepper, chopped
¼ c chopped green onions
¼ t dried thyme
1 can NSA diced tomatoes
¼ t black pepperRecipe
Cook rice according to package directions. While rice cooks, sauté shrimp in nonstick skillet over medium-high heat. Sprinkle the shrimp with Cajun seasoning, toss to coat. Remove shrimp from pan. In skillet, sauté garlic, green pepper, green onions and thyme; sauté 3 minutes or until tender. Stir in cooked rice, shrimp, tomatoes and pepper. Cook 1 minute or until thoroughly heated.
