Calamari in Tomato Sauce

1 Êpound fresh or frozen cleaned calamari, (thawed if necessary)
1 Êtablespoon olive oil (or use broth or wine or cooking spray)
1 Ê small onion, peeled and finely chopped
3 Êcloves garlic, peeled and chopped
1 Êcan (14.5-oz.) ready-cut tomatoes, drained
2 Êtablespoons tomato paste (no salt)
1 Êtablespoon balsamic vinegar
1 Êtablespoon chopped fresh oregano
1/4 Êteaspoon ground black pepper
2 Êtablespoons fresh lemon juice
1/4 Êcup chopped fresh parsleyRecipe
Cut calamari into 1Ú4-inch rings; combine with tentacles and set aside. Heat oil in a large skillet over medium-high heat. Add onion and garlic and sautŽ until softened. Stir in tomatoes, tomato paste, balsamic vinegar and oregano; bring to a boil, stirring frequently. Cover and reduce heat to low; simmer for 5 minutes. Add reserved calamari and cook until calamari is opaque and white; do not overcook. Season with pepper, and sprinkle with lemon juice and chopped parsley
May wish to try over rice noodles or steamed rice or potato
