Calamari in Tomato Sauce

1 �pound fresh or frozen cleaned calamari, (thawed if necessary)
1 �tablespoon olive oil (or use broth or wine or cooking spray)
1 � small onion, peeled and finely chopped
3 �cloves garlic, peeled and chopped
1 �can (14.5-oz.) ready-cut tomatoes, drained
2 �tablespoons tomato paste (no salt)
1 �tablespoon balsamic vinegar
1 �tablespoon chopped fresh oregano
1/4 �teaspoon ground black pepper
2 �tablespoons fresh lemon juice
1/4 �cup chopped fresh parsleyRecipe
Cut calamari into 1�4-inch rings; combine with tentacles and set aside. Heat oil in a large skillet over medium-high heat. Add onion and garlic and saut� until softened. Stir in tomatoes, tomato paste, balsamic vinegar and oregano; bring to a boil, stirring frequently. Cover and reduce heat to low; simmer for 5 minutes. Add reserved calamari and cook until calamari is opaque and white; do not overcook. Season with pepper, and sprinkle with lemon juice and chopped parsley
May wish to try over rice noodles or steamed rice or potato
