Chipotle Grilled Tuna

1/2 chopped red onion
1 chipotle chile
2 (4 oz. each) lean tuna fillets
2 medium tomatoes, cut in half crosswise
1 tablespoon chopped fresh cilantro
Fresh pepper to tasteRecipe
1. Heat grill.
2. Combine onion, chile and pepper in small bowl and mix well. Set aside.
3. Rinse fillets and pat dry. When ready to grill, oil grill rack. Place tomatoes and fish on grill 4 to 6 inches from medium coals. Cover grill.
4. Cook tomatoes for 5 to 6 minutes until tender and start to blacken on bottom. Cook fish fillets for 8 to 10 minutes or until fish flakes, turning once.
5. Remove tomatoes from grill and coarsely chop. Add to onion mixture. Add cilantro and toss. Place cooked fillets on platter and spoon tomato and chile mixture over fish.
"A friend of mine makes this and says it’s really good…I prefer my tuna VERY rare so haven’t tried it this way, but I know the sauce is good and may try it on much rarer tuna. "
