    1/4 fresh orange juice
    1/4 cup grapefruit juice
    2 teaspoons splenda
    1 garlic clove, minced

    1/4 teaspoon freshly ground black pepper
    1/4 teaspoon fennel seeds, crushed
    1 (6-ounce) tuna steak (about 3/4 inch thick)

    Recipe



    1. Prepare grill.
    2. Combine first 4 ingredients in a medium saucepan. Bring to a boil; cook until reduced to 1/4 cup (about 10 minutes). Remove from heat; cool slightly.
    3. Combine pepper and fennel seeds; rub over both sides of fish. Place fish on grill rack; grill 3 minutes on each side. Turn fish; brush with half of juice glaze. Grill 1 minute. Turn fish; brush with remaining juice glaze. Grill until desired degree of doneness.

    For a vegetable side, grill fennel wedges and toss with orange slices and grapefruit slices.

    YIELD: 2 servings (serving size: 1/2 tuna steak)
