Cod Fillets with Special Spicy Coating

Buny's note: to make more plan friendly, may wish to use oat flour rather than soy flour, and instead of cooking in butter/oil, may wish to simply use a bit of nonstick cooking spray.
List of Ingredients
4 skinless cod fillets (or other white fish)
3 Tbsp soy flour
1 Tbsp granular Splenda (or equiv stevia)
1 tsp chili powder
1 tsp ground ginger
1 tsp garlic powder
pinch salt
2 tsp crushed coriander seeds
2 Tbsp butter
1 Tbsp corn oil
lemon &/or lime wedges, to serve
Recipe
1. Rinse the cod fillets and pat them fry. Leave them in the refrigerator to firm up.
2. Mix together the gram flour with the soy flour, Splenda, chili powder, ginger, garlic powder, salt and the crushed coriander seeds.
3. Remove the fillets from the refrigerator and dust them with the flour mixture. Set aside.
4. Heat half the butter and oil in large non-stick frying pan and gently drop in 2 of the fillets. Lower the heat and cook for 2-3 minutes each side, turning twice ensure even cooking, until cooked through.
5. Transfer the cooked fillets to a warmed serving platter and cook the remaining fillets in the same way. Serve with lemon wedges.
I have a bunch of "green stevia" that I don't use often, because it's actual stevia leaf. A small amount - about 1/2 tsp - works well in this recipe. It gives the coating some nice green flakes, and doesn't overpower the rest of it. I wouldn't try using the white stevia powder in this recipe - it's too strong.
