Crab Cakes

List of Ingredients
� 1 stalk celery finely chopped
� 1/4 cup finely chopped onions
� 1 tbsp finely snipped fresh parsley
� 6 egg whites lightly beaten
� 1 cup oat flour
� 2 tsp wine
� 1 tsp dry mustard
� 16 oz fresh lump crabRecipe
Saute the celery, onions and parsley in a skillet. I use a little of the wine to saute until tender. In a medium bowl, stir together egg whites, 3/4 cup oat flour, wine and mustard. Stir in celery mixture and crab.
Shape into patties appoximately 1/2 inch thick. Coat in remaining flour. You should get 8 patties from the recipe.
Preheat a good nonstick skillet, cook over medium heat until golden brown, about 3 minutes per side.
