Crab Stuffed Cucumber Wedges

1, 6 ounce cucumber, washed + cut into 1/2 inch wide wedges
1 teaspoon dried cilantro
2 tablespoons reduced sodium soy sauce
2 tablespoons rice vinegar (unseasoned)
3/4 teaspoon sugar or splenda
3/8 teaspoon white pepper
1, 6 ounce can crabmeat, drained and picked over
paprika for garnish, optionalRecipe
Carefully remove seeds from top of each cucumber wedge. In a mixing bowl, combine the cilantro, soy sauce, vinegar, sugar/splenda , and white pepper. Add the crabmeat and mix thoroughly. Fill each cucumber. Dust, if desired with paprika.
