    ¼ cup oat flour
    2 cups chopped onion
    3 cloves garlic, minced
    2 cups fresh or frozen cut okra (optional)
    1½ cups diced green bell pepper
    1 cup diced celery
    1/4 pound ground turkey
    1 8-ounce bottle clam juice
    1 14-ounce can low-sodium chicken broth
    1 15-ounce can low-sodium chopped tomatoes, undrained
    2 teaspoons paprika
    ½ teaspoon ground red pepper
    ½ teaspoon black pepper
    3/4 pound (12 ounces) frozen, peeled and deveined, cooked shrimp
    4 cups cooked white rice
    file powder

    Recipe



    Preheat oven to 350 degrees. Toast flour in a shallow pan until brown, about one hour.

    Heat pot on medium and add 2 Tbsp chicken broth and ground turkey, cook until turkey is no longer pink. Add onion, garlic, okra, bell pepper and celery and sauté, stirring often, until vegetables soften, about 15 minutes.

    Stir in flour. Add clam juice, broth, tomatoes and seasonings. Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes.

    Add shrimp. Simmer on low heat for 8-10 minutes, until shrimp is warmed throughout. Serve warm over rice. Sprinkle file powder over the gumbo just before serving or place on table and let each person do their own sprinkling.
