    Fish Poached in Wine & Lemon

    List of Ingredients




    2 parts white wine
    1 part lemon juice
    1 1/3 pounds fish fillets
    1/4 teaspoon fresh ground pepper
    1/4 teaspoon kosher salt (may wish to omit)

    Note: the type of wine you choose will affect final flavor. you can taste difference between fruity wine vs. a dry wine.

    The amount of poaching liquid depends on the thickness of the fish and the size of the pan. You need enough to cover 3/4 of the fish. Bring the wine and lemon juice to a simmer in a pan with a lid. Rub the fish with pepper and place the fish fillets in the pan. Cover and gently simmer until the fish is cooked through.
