    Fish & Vegetable Skewers

    List of Ingredients




    1 lb. firm textured fish such as halibut or shark
    2 small zucchini, sliced
    1 large red onion, sliced
    8-10 largemushrooms
    2 large green or yellow peppers (seeded & cut into 1 inch pieces)

    Marinade:
    1/2 cup lemon juice
    2 Tbsp. fresh ginger, minced
    1/4 tsp. pepper
    1 clove garlic, minced or pressed

    Combine marinade ingredients, cut fish into 1 inch pieces, add fish pieces. Cover and refrigerate for 2-3 hours. Remove fish from marinade, add zucchini, onion, peppers and mushrooms to marinade to coat. Place fish and vegetables on skewers. Grill and turn carefully to cook on all sides. Cook a total of about 10 minutes. They are done when the fish flakes when touched with a fork. If you make 4 skewers, each one will have about 4 ounces of fish on it; if you make 8, each will contain about 3 ounces of fish. Plan your portion according to the amount of protein you are allotted on your particular plan. You can also easily substitute chicken breast for fish. Serve with potato or rice.
