Flounder Mosaics

1 tbl fresh lemon juice
1 tsp dijon-style mustard
1/2 tsp thyme
4 x 4 oz pieces flounder fillets
1 sm red bell pepper cut into fine julienne
1 sm green bell pepper cut into fine julienne
1 sm carrot cut into fine julienneRecipe
* In a small bowl combine the lemon juice, mustard and thyme. Lay the fillets out flat and rub the juice mixture onto the sides that are facing up. Then set about 9 pieces of julienne vegetables across the narrow end of each fillet and roll to form bundles. Wrap each bundle in a square of plastic wrap.
* Arrange the bundles evenly around the rim of a large plate and microwave on full power for about 4 1/2 minutes, rotating and flipping the bundles over midway.
* Let them stand until the bundles can easily be unwrapped, about 10 minutes. Use a sharp knife to slice each bundle into 1-inch (2.5-cm) disks. Serve hot or chilled.
* Note: If you have extra julienne vegetables, finely mince them and use as a garnish.
