    List of Ingredients




    1/4 teaspoon ground saffron (or a pinch)
    1/4 cup white wine
    1 1/3 pounds mild white-fleshed fish fillets such as haddock
    1/8 teaspoon fresh ground pepper
    3 plum tomatoes, cored, cut in half lengthwise, and sliced into half rounds
    1 clove garlic, peeled and crushed
    1 shallot, minced, OR 1 tbl minced red onion
    1 teaspoon well rinsed and drained capers
    2 tablespoons lemon juice

    Recipe



    Crumble the saffron threds into the wine. Stir and let sit for 30 minutes or until the saffron colors the wine. Preheat the oven to 375 degrees. Wash and dry the fish. Rub it wth the pepper and put it into a casserole dish.

    Arrange the tomatoes, garlic, shallot and capers around the fish. Pour the saffron wine and lemon juice over the fish. Cover the casserole and bake for 20-25 minutes, or until the fish tests done.
