    Grilled Citrus Scallops

    List of Ingredients




    1 lb fresh jumbo sea scallops (approx. 15 scallops)
    4 twelve inch wooden skewers (soaked in water overnight)
    1 tsp grated orange peel
    1/2 cup orange juice (for marinade)
    2 tbl soy sauce, low sodium brand (this is an off plan ingredient)
    1 tsp grated ginger root -- fresh
    1 clove garlic, minced, or more, if desired

    Recipe



    * Soak the skewers in water overnight - or at least 4 hours, so they don't catch fire on the grill.
    * Stir together peel, juice, ginger, soy sauce, and garlic, then pour over scallops. Cover and refrigerate for 30 minutes.
    * Pre-heat grill. Drain scallops, thread onto skewers. Grill over medium-high heat for 2-2 1/2 minutes, turn and cook another 2-2 1/2 minutes longer. Serve along with this rice and grilled vegetables, a small salad
