Grilled Swordfish

2 tablespoons balsamic vinegar
2 tablespoons lemon juice
2 tablespoons lime juice
1 tablespoon olive oil -- plus 1 teaspoon (for marinade)
4 cloves garlic -- minced
1/4 teaspoon white pepper -- optional
1 tablespoon ginger root -- minced OR 1 teaspoon ginger
lemon wedges -- for garnish
lime wedge -- for garnish
4 5 ounce Swordfish -- Shark or Mahi-mahi filletsRecipe
In a shallow GLASS* casserole dish, combine vinegar, lemon & lime juices, oil, garlic, ginger root, & pepper. Add fish. Turn to coat with marinade. Cover & refrigerate at least 20 minutes, turning occasionally. After 20 minutes, drain & discard any remaining marinade. Spray grill rack with PAM. Place grill rack 5" from coals. Grill fish 4 minutes on each side, until cooked through. Transfer to serving platter. Garnish with lime & lemon wedges, if desired.
NOTES : *I used a ziploc baggie & mixed all in there & then added the fish. It was easier to turn the fish & no dish to clean up afterwards!
