Grilled Tuna with Chipotle & Roasted Tomato Salsa

List of Ingredients
1/2 Med. onion chopped
1 chipotle chile diced
2 medium tomatoes cut in half
1/2 Green Pepper chopped
1 tablespoon chopped fresh cilantro
juice of 1 lime
Fresh pepper to taste
2 lean tuna fillets (4 oz. each)
Recipe
Heat grill. Combine onion, Peppers, chile, lime juice and blacd pepper in small bowl, mix well. Set aside. Wash fillets and dry. Place tomatoes and fish on grill 4 to 6 inches from medium coals. Or on Medium Propane grill. Cover.
Cook tomatoes for 5 to 6 minutes until tender and start to blacken on bottom.
Cook fish fillets for 8 to 10 minutes or until fish flakes, turning once. Or until desired doneness. Chop Tomatoes and add to the onion mixture. Add cilantro and toss. Place cooked fillets on platter and spoon salsa over fish. Serve with steamed rice.
