    Halibut the Allspice Girls Way

    2 onions, thinly sliced
    1 red bell pepper, diced
    4 cloves garlic, finely chopped
    1/2 teaspoon ground ALLSPICE
    1 cup sliced mushrooms
    8 tablespoons freshly squeezed lemon juice
    4 halibut steaks (or any fish that you prefer)
    ground pepper

    Preheat oven to 350 F. Heat a large nonsitck pan over medium-high heat. Saute the peppers until the start to wilt then add the onions and mushrooms. Cook until lightly golden. Add the garlic, allspice and pepper. Saute until the aroma of the garlic is present, 15-20 seconds, stirring continually. Add 4 tablespoons lemon juice.

    Place the vegetables in a large casserole dish and top with the fish. Sprinkle the remaining lemon juice over the fish. Season with freshly ground pepper. Cover securely with foil. Bake for 15 to 20 minutes or until fish flakes easily. This is dependent upon the size and thickness of the halibut.
