List of Ingredients
2 pounds flounder fillets
juice of 1 lemon
1 clove garlic, mincd
4 to 6 cups fresh cilantro, chopped
white wine for sauteing Recipe
Mix lemon juice and garlic in one bowl. Place cilantro in separate bowl. Dip each filet in lemon juice and then dredge in cilantro. Palce in baking dish and pour the remaining juice around the fillets. Bake for 20-30 minutes at 350ºF, or until fish is fully cooked, basting periodically. Fish is done when it flakes when touched by fork.
Variations:
Try some of your favorite cuts of fish with fresh chopped herbs from produce setion of the store. For Italian flavor, try fresh chopped basil; for a more Greek taste, try fresh chopped oregano.
Can try herb mixture on thinly pounded skinless chicken or turkey breast, and can use different combo of favorite fresh herbs. Place skinless turkey or chicken breasts between two sheets of waxed paper, then pound evenly with cooking mallet until breast is approx. 1/2 inch thick. Coking time may vary with chicken and turkey.
