Herbed Fillet of Sole

vegetable oil spray
1/4 cup fresh lemon juice (2 medium)
1 tablespoon dried parsley, crumbled
1/2 teaspoon dried tarragon, crumbled
2 teaspoons dried chives, crumbled
1/4 teaspoon dry mustard
2 tablespoons light tub margarine
4 sole fillets (4 oz each) Recipe
Spray a broiler pan and rack with cooking spray and preheat broiler. In a small bowl, combine lemon juice, parsley, chives, tarragon and dry mustard. Spread margarine in a 13x9 inch baking pan. Place fish in a the baking dish. Pour half of lemon juice mixture over fish. Broil about 4 inches from heat with oven door partially open for 4 minutes. Pour remaining lemon juice mixture over fish. Broil for 4 to 6 minutes, or until fish flakes easily when tested with a fork.
