Light & Saucy Shrimp

1 c. onion
1/2 c chopped green pepper
2 cloves garlic minced
1/2 c water
1 packet sweetner
1/2 tsp black pepper
3 big ripe tomatoes peeled and diced
1/2 c vinegar
1 lb shrimp
2 c cooked rice Recipe
In 2 qt sauce pan combine 1st 6 ingredients. Cover and simmer 10 minutes or till onions are tender. Stir in tomatoes and vinegar simmer covered for 15 minutes stirring occasionally. Add shrimp simmer 5 minutes or till shrimp is done. Serve over rice. This recipe calls for 1/2 tsp cornstarch and 1/2 tsp water to make thick, I didn't use it and it was WONDERFUL!!!! (the cornstarch was for living lean folks!!)
