Lime-Thyme Fish

List of Ingredients
2 tablespoons fresh lime juice
2 tablespoons white wine
1 tablespoon water
1 teaspoon drained (and well rised) capers
1/8 teaspoon fresh ground black pepper
1/4 teaspoon paprika
dash tabasco sauce
1 tablespoon chopped fresh thyme (or 1/2 tsp dry)
1 1/3 pounds fish fillets
1 lime cut into wedges (for garnish) Recipe
Preheat the oven to 375 degrees. Combine all the ingredients except for the fish and lime wedges. Put the fish in a baking dish, preferably a heavy ceramic casserole. Pour the baking liquid over the fish until it reaches halfway up the sides of the fillets. (Don't choose too large a baking dish or there won't be enough liquid. Too small a dish will crowd the fish against the sides.)
Bake untilt he fish is thesame texture and color throughout. Dense haddock will take about 15 minutes, perch ony 5-7 minutes. Garnish the fillets with lime wedges if desired.
