Start with Mahi Mahi (sold frozen in large bag at Sam's club)
Steam or microwave as many large leafs of Romaine lettuce (in bags at Sam's) to make them slightly limp (several seconds)
Lay a piece of mahi mahi (I usually cut them in half because they're so long) across the romaine leaf. Squeeze a very healthy dose of lime juice on the fish; then spread as much dijon mustard on the fish as you would a piece of bread. Roll the fish up in the leaf.
Bake at 350 for about 20-25 min (I haven't perfected the cooking time yet). The lettuce leaf is actually good, too; it keeps the fish moist.
The dish is designed to eat like that, but I like to saute some onions, saute some tomatoes (canned if you can have them); serve the already baked fish on top of the sauted veggies. It makes it more Mediterranean like that way.
