Mediterranean Seafood Stew

1 �tablespoon olive oil
1 � yellow onion, peeled and chopped
2 � red bell peppers, seeded and diced
3 �cloves garlic, peeled and minced
1 �tablespoon crushed dried thyme
1 �tablespoon crushed dried basil
1 �can (14.5-oz.) ready-cut tomatoes
1/2 �cup white wine
2 �tablespoons tomato paste
1 1/2 �pounds firm white fish
(original recipe called for 1/2 �teaspoon salt)

Heat the oil in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes. Add peppers, garlic and herbs. Stir and cook 5 to 6 minutes, or until vegetables are soft. Add tomatoes, wine and tomato paste; let mixture simmer for 15 minutes.
Add fish, cover and cook 7 to 8 minutes, or until fish flakes when forked. Season with salt and pepper. Serve hot.
