Mediterranean Shrimp

List of Ingredients
16 medium shrimp, shelled with tails on
16 thin green pepper slices
1/3 cup fresh squeezed orange juice
2 tablespoons white wine vinegar
4 cloves garlic, minced
1 teaspoon crushed fennel seeds
1 1 bay leaf
1/2 teaspoon ground cumin
1/2 teaspoon dried tarragon
4 large lettuce leaves (optional) Recipe
Note; can replace the bell pepper with snow peas. Can also purchase the shrimp already steamed and chilled. Fill a large bowl with ice water. Set aside. Bring about 1" of water to a boil in a large nonstick saucepan. Add the shrimp and peppers. Cover and cook, stirring once, for 3 minutes, or until shrimp just begin to turn pink. Drain and transfer to the ice water. Let stand for 2 minutes. rain and pat dry with paper towels.
In a resealable plastic bag, combine the orange juice, vinegar, garlic, fennel seeds, bay leaf, cumin and tarragon. Seal the bag and squeeze the package to mix. Open the bag and add the shrimp and peppers. Seal the bag and refrigerate for up to 2 hours. Dran before serving; discard the marinade and bay leaf. Serve on lettuce, if using.
