Mussels Steamed in Red Wine

List of Ingredients
2 pounds mussels
2 to 3 shallots, minced
1 to 2 garlic cloves, crushed
1 cup canned tomatoes, chopped
1 1/2 cups dry red wine
1 teaspoon oregano
1/2 teaspoon red-pepper flakes Recipe
1. Clean the mussels and inspect to make sure they're closed. Then soak/drain a couple of times and scrub if they're dirty. Pull off any beards.
2. Saute the shallots and garlic for about two minutes.
3. Add the tomatoes, then saute for about a minute more. Add the wine, oregano, and red pepper.
4. Stir and let everything cook down for a minute or so. Finally, add the mussels, and cover.
5. Once all of the mussels open (check after four minutes and then every minute thereafter), turn off the heat.
6. Ladle into bowls along with the juice and tomatoes.
