    3 cloves garlic, minced
    1 tablespoon water
    8 ounces bay scallops
    2 tablespoons chopped fresh parsley
    1/4 teaspoon crushed red pepper flakes
    1 cup white wine
    2 teaspoons cornstarch
    ground black pepper

    Recipe



    Coat a large nonstick skillet with nonstick cookign spray. Warm the skillet over medium heat. Add the garlic and water. Cook, stirring, for 2 minutes, or until the garlic is softened. Reduce the heat to low. Add the scallops, parsley, red-pepper flakes, and 3/4 cup of wine. Simmer, stirring occasionally, for 5 minutes, or until the scallops are opaque.
    Place the cornstarch in a cup. Add the remaining 1/4 cup wine and stir to dissolve the cornstarch. Add to the skillet and stir constantly until the sauce thickens. Season to tste with the black pepper.
