Poached Salmon

List of Ingredients
1 pound salmon fillets (1 - 1 1/2 inch thick) or 4 (4 oz) salmon steaks
Poaching Liquid:
3/4 cup water
3/4 cup dry white wine
1 medium onion, chopped (about 3/4 cup)
1 bay leaf
1/4 teaspoon pepper
1/8 teaspoon ground cloves
1/8 teaspoon dried thyme, crumbled
1 med. onion, quartered (optional) Recipe
Rinse salmon and pat dry with paper towels. In a large skillet, combine all poaching liquid ingredients. Bring to a simmer over medium heat. Reduce heat to medium low and cook, partially covered, for 5 minutes. Add the salmon. If needed, add water to barely cover. Simmer, covered, for 10-15 minutes, or until fish flakes easily when tested with a fork. Remove from liquid and serve with lemon wedges.
