Pollock with Cajun Sauce

List of Ingredients
4 pollack fillets (4 ounces each)
2 cups tomato juice
1 small onion, cut into quarters
1/2 stalk celery, cut in half crosswise
1/4 sweet red pepper, sliced (optional)
3 cloves garlic, minced
1/4 teaspoon dried basil leaves
1/4 teaspoon dried oregano
1/4 to 1/2 tsp cajun spice blend
1/4 cup chopped fresh parsley Recipe
Rinse the fish, and pat dry with paper towels. Set aside. In a blender or food processor, combine the tomato juice, onions, celery, red peppers, garlic, basil and oregano. Process until pureed. Puor into a large nonstick skillet. Stir in the cajun spice blend. Bring to a boil over medium-high heat. Reduce the heat to medium-low and cook, stirring occasionally, for 15 minutes, or until the mixture thickens into a sauce.
Add the fish. Cover and cook for 7 minutes, or until the fish is opaque. (check by inserting the tip of a sharp knife in the center of 1 fillet.) Spoon the sauce onto plates. Top with the fish and then sprinkle with parsley.
