Salmon Poached in Lemon & Wine

1/3 cup Lemon juice
1/2 cup Dry white wine
4 lrg Salmon fillets
2 tbl Minced parsleyRecipe
* 1. In a large skillet over medium-high heat, bring lemon juice and wine to a boil. Lower heat to medium. Add salmon and cover skillet.
* 2. Poach salmon until it flakes when pressed with a fork (5 to 8 minutes).
* Remove from poaching liquid and serve immediately, sprinkled with parsley.
