8 ounces tuna steaks or fillets
2 tablespoons finely minced onion
2 stalks celery, finely sliced
1 small toamto, skinned and roughly chopped
1/4 teaspoon thyme
3/4 cup dry white wine
Recipe
Preheat oven to 325¼F. Heat pan that has been sprayed with cooking spray over medium high heat. Gently fry onions and celery until soft. Stir in tomatoes and thyme and cook for about 5 minutes to soften tomatoes.
Place mixture in a shallow baking dish. Re=spray pan and quickly fry the tuna steaks to brown on each side. Place tuna steaks on top of vegetables, season with pepper, then pour wine over. Cover and bake 40-50 miutes until fish is tender.
Makes 4 servings (each serving is 2 oz. Protein A and 1/4 cup Vege A)
