Dilled Salmon

List of Ingredients
* Mesquite chunks
* 1 (3-lb.) salmon fillet
* 1 Tbsp seafood seasoning (see in seasoning section of 6wbmo category)
* 1 Tbsp chopped fresh dillweed
* 2 limes, quartered
* Garnish: dillweed sprigs
Recipe
1. Soak wood chunks in water to cover at least 30 minutes.
2. Prepare charcoal fire in grill; let burn 15 to 20 minutes. Drain wood chunks and place on coals.
3.Spray salmon with cooking spray ; sprinkle with seafood seasoning and fresh dillweed.
4. Grill, covered with grill lid, over medium heat (300 to 350 degrees) 25 minutes or until fish flakes with a fork.
Squeeze lime quarters over fillets. Garnish, if desired.
Makes 8 servings.
