    Fish Meal Packets

    From member libra: As the fish cooks, the precooked vegetables heat. A no-fuss meal modified from Company's Coming Barbecue Cookbook

    List of Ingredients

    * 1 lb fish fillets or steaks
    * 1/2 cup sliced celery, cooked
    * 1/2 cup sliced onion, cooked
    * 2 tomatoes, peeled and quartered
    * 2 cups cooked and sliced potatoes
    * salt substitute and pepper to taste (can omit salt substitute)
    * white wine
    * paprika

    Recipe

    Divide fish into 4 equal amounts. Place each on double thickness foil squares. Divide vegetables among packets, placing on fish. Sprinkle with salt substitute and pepper. Add a splash of white wine to each and sprinkle with paprika. Wrap. Place on grill over medium heat. Close lid. Cook for 10 minutes, turn, cook about 5 minutes more.
