Recipe Introduction
this dish can be done with many different fillets. Works well with bass, salmon or chicken. If it doesn't grill well, try broiling in a pan.
List of Ingredients
1 fresh red snapper fillet
Marinade:
juice of 1 lime
1 ripe tomato
1 shallot, finely chopped
1 clove garlic, minced
1 tsp olive oil
1/2 cup white wine
pepper to taste (original recipe also included salt)
Recipe
Mix marinade ingredients together ina bowl. Soak the fish in marinade at room temperature for 20-30 minutes. Be careful not to overmarinate, because the lime juice cooks the fish like a ceviche. Grill for 3-5 minutes on each side.
