List of Ingredients
* 1 tsp finely chopped shallots
* 1/2 cup chopped fresh tomatoes or canned tomatoes, drained
* 1-1/2 cups fresh corn, kernels removed from cob
* 1 tsp finely chopped, seeded jalapeno pepper
* pinch of cumin
* 1/2 tsp sugar substitute
* 2 tbsp balsamic vinegar
* pepper to taste
* 3 halibut steaks, each 4-5 oz
* pepper to taste
Recipe
Saute shallots in skillet in a small amount of water over medium heat, until soft but not dark, about 2-3 minutes. Add tomatoes, corn, and jalapeno pepper; cook for 1 minute. Add cumin and sugar substitute; cook 1 minute more. Add vinegar and cook until liquid reduces slightly. Add pepper to taste.
Heat broiler or grill. Season fish with pepper. Broil or grill steaks 3-4 minutes on each side, turning once. Serve with Rainbow Sizzle.
