    List of Ingredients




    1 pound white fish (cod, sole, flounder) cut in 1" cubes
    2 lemons, juiced
    1 tablespoon no salt added veg. brth
    3 tablespoons fresh parsley, chopped
    1 teaspoon fresh ginger, grated (OR a dash of dried ginger)
    6 baby zucchini, each cut into 4 chunks
    16 button mushrooms
    8 cherry tomatoes

    In a large bowl, marinate the fish with lemon juice, broth, parsley, ginger and garlic; cover and refrigerate for 1 hour, turning fish over every 20 minutes. Preheat broiler for 5 minutes on high. Remove fish from marinade. Using skewers, thread the fish, zucchinis, mushrooms and tomatoes alternately. Grill/groil for about 10 minutes, turning occasionally, until fish is cooked through. Measure out your appropriate portions for menu.
