Marinade it in orange juice or pineapple juice with herbs, white and garlic vinegar, garlic, onions, spring onions, black pepper and ginger for about 2-3 hours before cooking it. In a non-stick pan, steam a cup each of onions and spring onions, generously sprinkled with garlic, herbs, black pepper and ground ginger in about a cup of white wine, juice and water until it takes on a milky look. Then I place the fish on top of the bed of onions etc., cover and steam until the liquid is almost gone. I then add more water and turn the fish to steam for little while longer. Fish doesn't take long to cook - not more than 10 minutes. The result is a sweet and sour spicy fish with an incredible sauce!
