    Poached Fish w/ Portobellos

    List of Ingredients

    * 2 fish fillets
    * 2 Portabello mushrooms, chopped
    * 2 medium tomatoes
    * 2 green onions, minced
    * 2 cloves garlic, minced
    * Italian parsley for garnish
    * 1 tbsp lime or lemon juice
    * 1 tbsp balsamic vinegar

    Recipe

    Make a mixture of the mushrooms, tomatoes, green onions, garlic, lime juice, and vinegar. Add to a pan and place fish fillets on top of mixture. Slowly bring to a simmer, place a close fitting lid over pan and poach fish for 5-7 minutes or until done. Remove fish with a spatula and spoon some of the mixture over the top of fish and serve. Garnish with Italian parsley.
