1 1/2 pounds cod, cut into 4 portions
lemon juice to taste
pepper to taste
lemon wedges for serving.
Recipe
Arrange the cod in a microwave-safe glass dish. Sprinkle with lemon juice and pepper. Cover and microwave on high for 2-3 minutes. Check progress after 2 minutes. If fish is almost done, let sit fo a minute, rather than microwaving another minute (will continue cooking after heat source stops). Serve with lemon wedges.
